Paterna Seed Salad

Ingredients

Seeds of paterna

Vinaigrette

1 / 3 cup of oil

1 / 3 cup of household vinegar

½ teaspoon of mustard

½ teaspoon of sugar

1 clove garlic, salt and pepper to taste

Chopped parsley and chopped onion

Procedure

On a early pot, place the seeds (previously washed) add a quart of salted water. Cook over medium heat until you see steam coming out of the exhaust pipe.

Place the pressure regulator and when it starts to vibrate, aloud to cook for an hour so the seeds are slightly soft. Then, lower the heat.

Meanwhile, prepare the vinaigrette (optional):

Place all ingredients, except for the oil, in a glass jar and shake well. Taste and correct if necessary. Then add the oil, and allow to cool at room temperature in the pot.

Remove the seeds, let it cool and add the vinaigrette. Then enjoy them with lemon and salt.
