4 pounds of watermelon rind (without the green part)
3 ½ pounds of sugar
2 teaspoons of lime
Plenty of water
Use a watermelon with thick rind. Remove the green and red and use only the white part of the watermelon.
Cut into two inches squares or strips.
Make a mixture of water with lime and stir well, then place the watermelon and pour more water if needed (it should cover the watermelon). Let stand overnight.
The next day wash thoroughly and remove all the limewater and drain.
Cut the rind into strips. In a saucepan place sugar and some cinnamon sticks on water and mix well. Add the watermelon and cook at low heat until the peel is translucent (do not put the lid on the pot)
You can gradually add more water to the mixture, if is necessary. You may sprinkle some sugar or just serve the watermelon candy with its own syrup.
Note: It takes 4 to 5 hours to achieve the right consistency.
