Papaya Candy

Ingredients:

• 1 medium papaya, (less than a pound)

• powder limestone mixed with water ( resembling the appearance of rice water), enough to completely cover the papaya

• 2 cups water

• 1 pound Sugar

Procedure:

Peel the papaya and cut it into thick strips. Then place it in the lime water for 2 hours.

After that, rinse thoroughly and leave until is completely dry.

Simmer in a large bowl, with the sugar diluted in 2 cups of water for 12 hours. Move from time to time to prevent sticking.

Once soft, remove from heat. Let it cool and then sprinkle sugar on top.
