Sweet Potato Candy
Ingredients:
• 2 1 / 2 pounds of camotes (sweet potato)
• 1 1 / 2 pounds of sugar
• 2 cups milk with cinnamon
Procedure:
Place the sweet potatoes in a saucepan, cover with water and cook over medium heat until it boils. Reduce the heat and cook on low heat until tender. Remove from the heat and discard the water.
Peel the sweet potatoes. Grind in a food processor. Once pureed, return to the pan (without water), add milk, sugar and cinnamon.
Cook over medium heat and move constantly with a wooden spoon. Cooking time can be 1 hour and 20 minutes, or until the puree is thick and consistent.
Cool. With your hands, make little volcanoes like candies and place them over cardboard. Submerge in syrup.

3 / 4 cup of water
1 tablespoon of lemon juice
Procedure:
Place all ingredients in a small saucepan and cook uncovered in medium heat for 15 to 20 minutes. Dip volcanoes immediately as the mixture may harden quickly.
